Description

The Benchmark 117 has a 6.5-inch stainless ulu blade on a 4.75-inch black synthetic handle.

An ulu is an Inuit and Yupik pattern, a crescent blade with the handle mounted above its center rather than at one end. Pressure goes straight down through the wrist into the middle of the edge instead of out along a lever. That geometry is why an ulu rocks through herbs, chops vegetables and scrapes hide with far less effort than a straight knife, and why the shape has survived thousands of years essentially unchanged.

The full curve stays in contact with a board through the whole stroke, so a rocking motion cuts the entire length at once. Stainless keeps upkeep low on a kitchen tool that meets water and acidic food daily. Explore more Kitchen Knives.
